Singapore noodles

This is a recipe for Singapore Noodles with Marinated Pork Fillet and Prawns. The recipe is authentic from the BBC, but Singaporean noodles can probably be replaced by Lithuanian ones.

Ingredients for 3-4 people

  • 300 g of pork loin without fat and tendons
  • 3 tablespoons of dark soy sauce
  • 2 tablespoons dry sherry (spirited Spanish wine)
  • 2 teaspoons of loose brown sugar
  • ½ tsp Chinese spices
  • 3 tablespoons of sunflower oil
  • 100 gr. small egg noodles
  • 1 red onion, thinly sliced
  • 1 red bell pepper, pitted and sliced
  • 100 g of sliced shiitake
  • 2 chopped cloves of garlic
  • 20 g of fresh ginger, peeled and finely grated
  • 2 teaspoons curry
  • 200 g of shrimp
  • 10 chopped onion letters

Preparation

Put the pork fillet in a bowl and pour soy sauce and sherry over it. Add sugar and spices. Leave to stand for 30 minutes. Heat the oven to 200 C. Drain the pork, keep the marinade. Place the pork on a small foil-lined baking sheet. Drizzle with one tablespoon of oil and bake for 12 minutes. Remove from oven and set aside to cool. While the pork is cooking, cook the pasta according to the instructions on the package. Heat a large skillet over medium heat. Add two tablespoons of oil and stir-fry the onion, red pepper and shiitake for 5-6 minutes or until the texture begins to soften and the color lightens. Add the garlic and ginger and stir-fry for another minute. Add the curry to the pan and cook for another two minutes. Cut the pork in half lengthwise and cut into thin slices. Add the pork to the hot pan along with the shrimp and onions. Stir-fry for one minute, then add the drained pasta and the reserved marinade. Stir with chopsticks or a pair of forks for 2-3 minutes until heated through. Serve immediately!

Marinated shiitake

Ingredients for 2-3 people

  • 300 gr. organic oak shiitake
  • 50 ml. extra virgin olive oil
  • 50 ml. rice vinegar
  • 30 ml soy sauce (best Japanese)

Preparation

Cut the shiitake into thin slices and place in a bowl. Pour in the oil, vinegar and soy sauce and stir to coat all the mushrooms. Leave the covered bowl in the fridge for 1 hour. Just serve in a deep bowl and top with toasted sesame seeds. Delicious!

Shiitake pasta

This delicious Italian pasta recipe is ready in 15 minutes and requires 7 simple ingredients.

Ingredients for 2-3 people

  • 380 g. pastes (suitable for various forms).
  • 300 gr. shiitake (fresh or dried). Coarsely cut, remove stems.
  • Garlic, 2 cloves, peeled and lightly crushed
  • Extra virgin olive oil, 2 tablespoons
  • Fresh parsley, 1 tablespoon, finely chopped
  • Fresh cream
  • Lemon peel
  • A pinch of salt and ground pepper

Preparation

Heat a large skillet over high heat until very hot. Add coarsely chopped shiitake or uncut if smaller. Add a drizzle of olive oil and stir-fry for 3-4 minutes on very high heat until lightly browned. Reduce the heat and add the soy sauce and the sesame oil you mixed earlier.
Mix everything well for about 1 minute and immediately pour into a container. Season with salt and pepper. Enjoy!

  • A pinch of salt and black pepper

Preparation

Mashed potatoes with shiitake and chives

Ingredients

  • 500 grams of potatoes
  • 200 g of fresh shiitake (from oak logs)
  • 1 pack onion letters
  • A few letters of chives
  • 50 g butter Nutmeg
  • 1 tablespoon of olive oil
  • A pinch of salt and black pepper

 Preparation

Cut the shiitake mushrooms into small cubes, remove the stems and set aside. Boil the shaved potatoes with a little salt and shiitake mushroom stalks. Cook the mushrooms for 10 minutes with finely chopped chives. Drain the potatoes, mash them with a potato masher and add butter. Mix the porridge with mushrooms and spring onion. Add chopped chives, a pinch of nutmeg, salt and freshly ground black pepper. Enjoy!
